Ice-cream with Sedgwick’s Original Old Brown salted caramel sauce
Serves 6
 Recipes:
2 l best-quality store-bought vanilla ice-cream
6 sugar cones

For the caramel sauce:
200g soft brown sugar
50ml Sedgwick’s Original Old Brown
75ml double cream
50g butter, cubed
½ tsp sea salt flakes

Method: 

1. lace the sugar in a large saucepan with the Sedgwick’s Original Old Brown.
2. Gently heat the mixture over a low temperature, swirling the pan but not stirring it, until it is just melted. Turn up the heat and simmer gently, swirling regularly until it turns a golden caramel colour.
3. Remove the pan from the heat and then quickly whisk in the cream and butter.  Be careful because it will splutter.  Add the sea salt flakes and stir thoroughly. Allow everything to cool down completely.
4. Take the ice-cream out of the freezer and allow it to soften slightly. Pour the caramel over the ice-cream and marble it through the ice-cream using a wooden spoon. Return the ice-cream to the freezer and freeze until solid. 

Serving:

Serve your Sedgwick’s sundae in cones or alternatively serve the caramel sauce over the ice-cream.
